Ruby Grapefruit & Thyme Mimosa | Bromley by Wolf Blass Pinot Noir ChardonnayAdd your favourite gin, thyme simple syrup, ruby grapefruit juice and a squeeze of lime to a glass. Top with chilled Bromley by Wolf Blass Pinot Noir Chardonnay. Garnish with a sprig of thyme and a slice of lime, and enjoy!

To make the Thyme Simple Syrup:
Add the sugar and water to a small saucepan. Bring to the boil, then reduce to a simmer and stir until the sugar is dissolved. Remove from the heat and add the thyme. Cover and steep for 10 minutes. Remove the thyme and strain into a glass jar. Will store in the fridge for up to 6 weeks.
