Taste Description

Nose

A delicate nose with hints of crisp snowpea, mulberry leaf and green bean.

Flavours and Palate

A fresh, very well balanced palatewith regional Adelaide Hills notes of passionfruit, white blossom and green bean. A small amount of  natural sugar was retained after fermentation, which has resulted in a wine with perfectly balanced sweetness and acidity, giving it a crisp, long and refreshing finish.

Adelaide Hills, South Australia

The Adelaide Hills is one of Australia’s younger wine regions, but it’s as savvy as its famous Sauv Blanc. With a cool climate and high altitude, its dynamic winemakers are also responsible for top notch Chardonnay and Pinot Noir.

Good rainfall through winter was followed by a very dry spring and summer. Cold nights and mild days throughout summer and autumn extended the growing season, maximising quality and promoting enhanced aromatics, elegant varietal expression and exceptional acid balance.

Clare Dry - Winemaker

During her teens, Clare's interest in horticulture led to work experience at a winery on Victoria's Mornington Peninsula where she grew up. It took just two days of work experience for her to know she wanted a career in the wine industry. After high school, Clare enrolled in a Bachelor of Oenology (Wine Science) at Adelaide University and then, with a thirst for more practical knowledge before recommencing study, took a gap year to work on a vintage on the Mornington Peninsula, and a second in the Pfalz region of Germany.

Since her graduation in 2007, Clare has been a key member of the Wolf Blass team and works alongside her colleagues to ensure the guiding principles behind each wine are met.

Clare has a strong interest in cool climate wines and is particularly fond of the Adelaide Hills, where she spends a lot of time in vineyards during vintage assessing grapes for harvest, especially Pinot Noir.
